Trifecta Scallops
Seared scallops done 3 ways. I enjoy the taste of seared protein. The charred crisp on the outside is like the tasty treasure chest locking the juicy and raw bounty inside.
I wanted to create 3 visually and tastefully distinct scallops seared in different oils.
The left scallop was seared in the aromatic olive oil. It is flavored with shaved parmesan and some flower peppers which included the lovely lavender and rose petals.
The center scallop was seared in the rich butter. It is flavored with paprika, and red rock salt. I used the butter to cook the King mushroom the scallop sits on.
The right scallop was seared in the nutty sesame oil which was infused with garlic, ginger and cilantro. Lightly salted and garnished just with the cilantro and ginger.
